Pork bones, chicken frames, dried scallops, and aromatics go into the pot before dawn. By lunch, it's a milky, savory foundation that carries every bowl.
We've been at 5 Catherine Street since day one. Locals bring out-of-town guests here; regulars don't even need to order — we know their bowl by heart.
Tender slices of five-spice braised beef shank, baby bok choy, and our signature hand-pulled wheat noodles swimming in a broth that's been reducing since 6 AM. Topped with pickled mustard greens, a flurry of scallions, and a spoonful of our house chili crisp — made fresh every Tuesday with Sichuan peppercorns and dried shrimp.
